Burn Butter™ MCT Buttered Salmon w/ Caramelized Onion


There are so many keto friendly recipes to be had out there. Non-keto doers may assume that we only eat bacon and butter; however, we like to be boujee sometimes and there are endless amounts of savory meals to be had while doing the Keto Diet. 

One ingredient that us at Burn Butter™ see as a necessity is MCT-C8 oil. MCT oil converts into energy quicker than other oils, increases your metabolic rate, and can help control your cholesterol. MCT Oil is a great way to increase your healthy fats and push yourself into ketosis faster. 

We found a delicious and savory salmon recipe on LowCarbeDiem.com and we made it our own using our Burn Butter MCT oil! We doubled the recipe so you can make it with your Keto Bae on your next date night! 

Burn Butter™ MCT Buttered Salmon w/ Caramelized Onion

What you'll need:
2 8oz. salmon fillets
1/2 c sweet yellow onion, sliced
2 tbsp unsalted butter
2 tbsp Burn Butter ™ MCT oil (or coconut oil)
1/2 tsp lemon juice
1/2 tsp fresh dill, chopped fine

Directions:

Preheat grill to medium heat 

Meanwhile, cut your onion in half and with the onion face down, thinly slice onion into strips.

Heat a skillet on medium-low heat, add a tablespoon of butter or oil, add onions to skillet, and sautee onions, stirring occasionally until they reach a caramel color (for 1/2c. it should take around 10-15 minutes).
Remove from heat and set aside on a plate.

Oil grill grates before placing salmon on grill so salmon doesn't stick! 

Brush the top of your salmon filet with butter or oil, season with salt and pepper, and place salmon face down. Grill the salmon fillet about 6 to 8 minutes on each side, or until the fish flakes easily with a fork. 

(If you want to be fancy, you can rotate the salmon 90 degrees 3 minutes into cooking it while its face down for some lovely cross hatch grill marks!)

Heat butter, Burn Butter MCT oil, and lemon juice in the same skillet you cooked the onions over medium heat. Stir well.

Once the sauce is to your desired thickness pour the sauce over the salmon and sprinkle chopped dill over top. Pair with a salad, or side of broccoli or cauliflower (add the carbs!).
